Oh, there is no question about what they sing. It is the Cherbubic Hymn in Greek, you can clearly hear the words "τὸν τρισάγιον ὕμνον προσᾴδοντες" ("ton trisagion imnon prosadontes") from 1:54 to 2:41. Actually, the recording lasts only to 2:41 and is then repeated twice.
