sometimes these bowls are referred to as chakra bowls also because the different sizes of the bowls resonate with the various chakra centers. about 12 years ago, while in a metaphysical shop, they had some on display in the back of the store. i was up near the front and someone starting playing them. i felt an immediate pressure and tightening of my throat. i went back to inquire which bowl they were playing and sure enough, it was the throat chakra bowl. since they're vibrational, i can imagine that they would have a positive effect on water as well.
