I have a tofu press, and I use it for any and all vegetables to make patties or such things as crusts. It squeezes out all liquids. I made my mock crab cakes out of zuchinni, and (not on phase 2), and they were perfect, not moist at all. I use it for falfel mix as well. I will use it for cauliflower pizza crust, it will gradually squeeze the water out. I think it's tofu xpress.com.
