It shouldn't go all the way back to the tail, as the muscle groups do not extend back that far...but in some really muscular dogs it can be visable almost down to the hips.

It's not really deep or anything...just slightly raised on either side of the spine.

Here's a dog anotamy pic of musculature. It's the muscle's on either side that run up along the shoulders and spine that create the effect the OP is describing.



This is a whippet with a genetic mutation that doubles it's muscle mass. You can kinda see the faint bulge on either side of the spine.
