I'm pretty sure you mean you just held his mouth shut, right? We've done this to our dogs in the past when they chose to get mouthy with us.... doesn't hurt them at all. But I wouldn't recommend it with a dog that doesn't trust people because of previous owners, it may make your dog not trust you.
It's ok to make loud noises (not yelling) .... an example would be.... You see your dog is sniffing towards food you have on the table, he is about to snatch it and you give a firm, loud 'ah ah' to redirect his attention that he has just been caught. This will only startle him for a few seconds long enough to not get the food you have on the table as opposed to him tucking his tail, hiding, being fearful, etc. because of yelling that he doesn't understand.
