I'm pretty sure you mean you just held his mouth shut, right? We've done this to our dogs in the past when they chose to get mouthy with us.... doesn't hurt them at all. But I wouldn't recommend it with a dog that doesn't trust people because of previous owners, it may make your dog not trust you.
This is what I was thinking, you have to tread carefully with a dog prone to fearfulness/skittishness for whatever reason.

Also...if you leave tasty food out within a dog's reach and you aren't immediately there to say "drop it", "leave it" or remove it from the dog...then it's a fair cop. If you need to scold someone scold yourself.
