I don't hate any breed of dog.
However, when people say 'You don't have to worry about my Lab biting you.' I will bring up the fact that the dog that would try to chase down all the kids in the neighborhood was a Lab mix and that it was a Lab mix that tried to bite me on the swing set. And that was just as a kid. I've seen plenty of unstable Labs and Lab mixes at the shelter.
Does that mean I hate all Labs? Most definitely not. In fact, one of my favorite dogs ever was a Lab/GSD mix.
Are they my first choice in owning a dog? No.
Do I think they are overbred and that their temperament suffers from it? You bet I do.

I just had to giggle at that statement.As an owner of 3 GSD,I can say WITHOUT A DOUBT,that GSD never shut up.

I also wanted to make mention that a lot of the breeds coming up on this thread are popular ('pit bulls', 'labs', gsds', etc.). Whenever a breed is popular, their will be more dogs with poor temperaments. And if that breed of dog is often used for guarding by the uneducated/irresponsible, you will see an even greater number of unstable/unsound dogs because the ignorant want a dog like that for guarding/protection.
