Only if you finish paying him his fee.
That was the contract we had with our photographer. He worked with someone, and if he would be unable to provide the service, someone he vouched for would replace him. Not an ideal situation, but if he became ill the night before, what could he possibly do...
Can't really ask for more than that and still be reasonable. Obviously, if afterwards you're not satisfied with the replacement, you have to raise the issue with the person you contracted with.
... but honestly, I can't believe you don't have cancellation terms and absence terms in your contract.
