CDMA + unlocked doesn't make any sense. The objective of an unlocked phone is for you to be able to take your SIM card and put it in the phone, no matter what SIM it is. In the future (i.e. for LTE) Verizon and other CDMA carriers' phones will have SIM cards but for now no such luck. Nokia tried to float a standard a while back (R-UIM) but no US carriers picked it up because they don't make money competing with each other... They make money locking you into contracts. Chances are that the only way you'll ever be able to get a Nexus One on Verizon is from Verizon.

Coincidentally, or not, most GSM phones also now allow you to operate SIM free so you could conceivably buy them without service and use them as you envision. CDMA... Not so much.

I know you prefer to not use Skype, and I also understand that you'd like to use Verizon, but you might be interested to learn that the Nokia N900 has full Skype integration - like your contacts and your Skype contacts are one and you can receive/hold/flash Skype calls while on a network call, etc. It's pretty awesome - you wouldn't know it was Skype vs. a regular call, that's how integrated it is. It also integrates Google Talk although I don't know if it's to the same extent.
