A pub I frequent in London used to serve minute rib eye steak, now they do minute sirloin instead.. I know nothing about steak, what's the difference (apart from the fact it comes from a different part of the animal)?


It's Worcestershire.
The ribeye is fattier (more flavorful) and more tender. The sirloin is a bit different in flavor, more tender than some other budget cuts but not as tender or flavorful as the premium cuts from the rib or short loin (new york, tenderloin, t-bone/porterhouse).
