Islamically speaking you can't really get engaged without the permission of the girls parents which is why they maybe suspicious of you, and you shouldn't really have contact with the girl either. If you were unaware of these things it is best to apologise to her parents and explain to them that you are a convert and are not aware of some of the rulings etc and you wish to ask for her hand in the correct manner

Sister, I think if the parents absolutely refuse to accept a proposal and don't give a man a chance, then one can get engaged without the parents permission.

But our problem wasn't that it was without parental permission. It was that it was without them even knowing. So you're right, and insha'Allah I plan to apologize and propose in the proper manner. Her father has decided to meet with me along with his friend who's an American convert as well alhamdulillah so we'll see how it goes from there.
