How do teachers teach Quran during menses?
She can break up the letters a word at a time, although some scholars have said a teacher of the Quran is permitted to break the ayah up into a two words at a time. Mufti Kacholvi sahib (Shaykhul hadeeth of Darul Uloom Dabhel and senior mufti of Darul Ifta wal Irshad, UK) said she should not recite more than one word at a time. (Shaami 1:292)

Therefore, if she can teach her class like this then that’s fine, otherwise if teaching in a maktab then she could maybe swap with a teacher who is teaching a foundation kitab and doesn’t need to recite entire ayahs, just for the duration of her menstruation. If that’s not an option, she could just listen to the students recite and correct their mistakes only and use a recording etc to teach them the next lesson, if need be.

so in that case a book in which the words outweigh the quraan ayahs it is permissible to touch?
Yes, if you have a book of tafseer, like the Ma’ariful Quran for example, and there is commentary in it as well as Quranic verses then she can touch it in during menstruation, as long as she doesn’t touch the parts where the Quranic verses are written. (Imdadul Fatawa 1:192)

Do you have any reference from Quran & Hadiths? As far as I know, she cannot offer salats and do sex with her husband during her menses, everything else is ok.
لَّا يَمَسُّهُ ۥۤ إِلَّا ٱلۡمُطَهَّرُون
(Quran56:79)
As Sis ummitaalib says, there is more too it. Menstruation affects many rulings, approximately 22 are mentioned in Bahrul Raiq. For women, it’s very important that she learns the rulings of menstruation thoroughly, as many of them affect her everyday life and the acceptance of her salah and other ibaadah.
