Salam,
I was on Shia chat, just seeing how Shias chat to each other etc. And they were talking about Mutah and how it is hard to control yourself so mutah is a good way to stop us from committing fornication.

I am not here to criticise or separate. but obviously we all know Mutah was deemed forbidden soon after. On the chat a guy implied that Umar (ra) stopped the practice of Mutah and then went on to insult Umar (ra)

Allah and his Rasul banned Mutah, Umar merely enforced this ban, if I recall correctly (and what I read was correct ) people attempting to do Mutah became a problem during Umar's Khilafa.
I just want to ask is this really what Shia are like all the time? I mean this is terrible...
It varies. That's one of the problems of the Shia, they very wildly on how much they deviate. Some Shia are like the man you posted about, others aren't. Some curse Sahaba (audhu billah) openly and others do it behind closed doors and deny that they do it in public. Some Shias truly do believe that it is haram to curse Sahaba and others pretend to believe it.

Salaams

At least the Zaydis and Sufi Shiahs are mostly free from this type of evil.

How can a Shia be a Sufi? Sufi Shia is an oxymoron.
