Was disappointed to see that none of the men in the pictures had beards, but had long mustaches instead- exactly what the Prophet hated. Is there any reason for this?

I guess it was due to common decline of Islamic practice, nevertheless you will find some Ottoman warriors having the full wâjib-beard mâsha Allâh:

As for the scholars it appears that all of them had the imâmah and full wâjib-beard mâsha Allâh.

At the end of the day these where brave Muslim brothers fighting and dying for the sake of Allâh

, so may Allâh

forgive them their shortcomings and elevate their rank in the here-after. Ameen.
