I would recommend you to complete the 6-year Darul Uloom Chicago part-time alim program with Mufti Nawalur Rahman sahib and do your undergraduate degree simultaneously, taking one year off for dawrah-e-hadith. With all due respect to Shaykh Hussain Sattar and company, you cannot really call the sacredlearning program an alim course, and from what I have heard, he will be the first to tell you that. As far as Quran is concerned, since you are already a hafiz, just review a 1-2 ajza a day, and after a couple years, you should be solid.

If there were a third choice in your poll, I would vote:
Become a hafiz, alim, and a doctor.

Out of curiousity, where do you want to do your undergraduate degree, and where do you wish to go to med school?
