Look There are two Hadiths, one about "hitting the boy on the face" and the other about the "Sixty Cubits"...

The explanations (Which I heard from different ppl i asked) were the following:
1- His Image meaning the image of the Boy, as In Adam was created with a Face and arms and legs and so on ... so is that Boy(every Human) So Don't Hit him on his face and make fun of how it looks, or maybe there was a similarity between his and Adam's PBUH face.
2- Allah created Adam PBUH in his image, meaning Allah is merciful and Adam was merciful, Allah said that he has a Face and He created Adam PBUH with a Face So Don't Hit him on the face or mock it.
3- Allah created Adam PBUH directly in this image (he didn't have to transform from foetus to child to Man) and He was Sixty cubits High (maybe Only in heaven) Thus destroying the theory of Evolution.

I tend to go with the third one.
