I can't comment on shopping; however, the Hong Kong Kendo Association is an extensive, high-level organization, conducting many practices a week.

You might start with contacting them about tips, but better yet, take your equipment and engage practice with them.

Enjoy your trip. Hong Kong is a wonderful place to do kendo, eat and drink. The people are terrific.
