If I mutilated a calf, I'd take the tenderloins and leave the rest.
the tenderloins and the skirt/flank. yeah, its tough....but it sure is full of flavor.

when i was at the Master Grill in NYC they would prepare ribeye, sirloin, filet, and skirt (among their meat menagerie). The skirt was always the one that everyone wanted.
