I'm trying to write one for our current church, but I don't know which programs to use/buy for this task. Word is nice, but it's not that great. The pictures don't seem to come out on my Word either. I can't use publisher, because they don't have that for mac i think. I'm thinking about using iweb, but would it print out well? Thanks for any tips anyone might have!

QuarkXpress I believe is the Mac equivalent to publisher. And it's not too shabby either....

If you're looking for open-source, give scribus a try, I think that should work on mac. It's pretty good too, it's what I use with linux.

Adobe pagemaker. That, along with photoshop are what started it all. Also the Mac iWork suite gives you "pages" which is much like Pagemaker and "kenote" which is similar to Powerpoint at way less $$.
