Default Medium rare steak so tasty!
I'm currently sitting in The Edgar Wallace (pub I frequent in London) and I've just enjoyed a delicious meal of medium rare sirloin steak, chips and salad. Having a steak cooked that way is so delicious. Up until recently I've always had my steak well done; I had no idea what I was missing! Now I need to try it rare. Yum!

Well cooked steak is rubbish, you might as well just have a burger. Different cuts of meat lend themselves to different cooking times. Fillet tastes better rare IMO and rib-eye medium-rare.

If you really like steak then go to a Gaucho steakhouse. The steaks are amazing and they give you advice on how each cut is best cooked. Service can be a little slow as they are always so busy but well worth the wait.

It's actually been a while now since I had a rubbish....sorry I mean a well done steak. I usually go in pubs because most of time I'm on my own and I like to enjoy a nice pint of real ale with my meal, but I'll keep your suggestion in mind for when I'm actually with someone.

I was in the Gaucho's in Eindhoven a few months back with my work. One of my colleagues ordered her steak "blue" and the waitress did not know what she meant.

I basically said that if she just lead the cow in, then my colleague will carve a piece off the side. [rofl]

Sorry, didn't think of it, and I didn't post until it was in my tummy!

Also, I wouldn't want to look odd taking pics of my meal in the pub (it's a small pub).

Now I'm in the British Museum (members' open evening, my reason for travelling to London tonight) having a latte. Then I think I might head off home.

Oh yeah, and I had garlic butter on my steak. I wanted blue cheese sauce but they were out of it.

Was it a language barrier? I have mine that way and have eaten in several Gaucho grills.

Probably, but it made for an amusing moment for all concerned. Apparently even in Dutch, the most that someone had ordered before was rare... - not "mmmoooooo!!!!".

So what's the best level of "doneness" for a sirloin steak (bearing in mind US and UK cuts are different)?

Rare or medium rare.

If it's blue it will be too gummy and chewy, not juicy yet.

At Rare it's juicy enough to eat, anything above medium rare and the juiciness will start to diminish greatly.

Well done! No not the steak, but that you had your meat the proper way.

We can discuss medium rare, medium or blue.. but at least now you tasted the proper juices coming from a tender piece of beef.

Now, it's getting warmer outside.. should look into BBQing ! [thumbup]

should look into BBQ'ing??!! just counted 12 weeks since christmas - i reckon i've had at least 12 BBQ's. Its THE way to cook meat. Saturday = fillet steak day

If my steak isn't still bleeding then I don't want it.

Rare is the only way I have it.

It also depends how much marbling is present in the steak. A steak with more marbling can be cooked slightly longer as it keeps it moist. Sirloin only really works if it's thickly cut as well.

I think rib-eye is my favourite cut.

I only discovered blue cheese sauce last year. What have I been missing! Creamy peppercorn sauce is a close second though. Some garlic mushrooms also go well with steak.

You always eat a good steak with just salt and pepper.
