Aphex Twin and other projects by Richard D James are very good, but not all of it is ambient. In fact, most of it isn't. The Aphex Twin Selected Ambient Works Volumes 1 & 2 are defintely worth listening too. The first volume is much more beat based though.

Boards of Canada, Tycho, Tipper, Autechre (some albums), Bola, etc are all also very good.
