Think about it. You're in an open field. Hear loud noises. Your instincts are that loud means predator. You run towards trees and cover. How do you even know that deer have perception of speed? They've generally been hunted by wolves etc, not by cars, which they have only recently been brought into existence.
You have to train children to look out for cars and cross the road safely; until you tell them things that are unsafe, they do not know/care/have the instinct. If mummy is across a busy road, a 2-year-old is not going to watch for cars, they're going to try and cross the road.
You're trying to apply logic to instinct. They're not the same.
