Default Cooking with gas
I'm after some helpful advice (not from a salesman)

Has anyone here experience with electric & gas ovens?

Which is better?

I'm thinking about switching to gas. But a friend reckons electric ovens are better to cook with (so he
s been told)


Gas cook tops are better in my opinion, but I've never used a gas oven.

All opinions will be appreciated.

A good friend has told me that one must have a gas stove top, and an electric oven...

and quite frankly i agree with them - gas ovens are rubbish!!!!!! (well, mine is, and there is naught i am able to do about it).

The killer is, is that gas ovens heat unevenly. very bad for cooking certain things.

Agreed- gas ovens (IME) don't heat evenly and when the flame goes out, you mightn't know about it until you want to eat dinner.

my electric oven has a 'Turbo Fan' & it is explicitly for the purpose of evening out the heat.

wouldn't it work for gas ovens too?

This is the killer with mine... though apparently the flame only ever goes out for _me_... *grumbles*

So i refuse to use it, and use my convection oven microwave instead... now THAT thing is the BOMB!

I used to have one of those. I gave up on it after a year. It was impossible to keep clean, spatters would just weld themselves to the sides and roof. Worked well but disgusting to look at.

hrrrm, i do not have this problem... though if i do see that something has splattered, then i'm quick to clean it up, because i know how hard it is to clean if you let it stay there for a bit...

I vote for gas stove and electric oven.

However, you used to be able to get gas stoves with one electric "burner". That was apparently a good combo if you cook things that require simmering for many hours.

Apart from the comparisons already mentioned (caveat I haven't read the whole thread) I'd spread my risks too.
Having the oven a different power source from the cook top has saved me some hassles when the power has gone out, or when the gas bottle has run out.

Gas ovens apparently introduce water into the oven via combustion which is supposed to make a difference. You can do the same thing with a tin of water in an electric oven. Not sure how much of a difference it makes, might be a bit of wankery.

For more years than she cares to remember, my mother did cooking demonstrations. Gas was always God.
But since then with the advent of ceramic electric elements for stoves, this has improved them greatly. And the advent of the electric fan forced ovens has pretty much brought them (almost) up to par with gas ovens.
Gas still has the advantage of the temperature being much more responsive- it doesn't take as long to heat up, nor as long to cool down if you lower the temperature.
If you do dishes that require a certain temperature for a certain time with little room for error, then i'd go gas. For most people, with a fan forced oven, the difference wouldn't be enough to justify one over the other.
The big advantage of gas over electric- when the power goes out you can still cook & keep warm.

I wouldn't consider going back to an electric oven.

I don't see why the flame would go out. Never has on my gas BBQ, unless the bottle ran dry or strong wind blew.

Domestic gas ovens can be a bit hit and miss. You get what you pay for.

In the commercial arena, large gas ovens are great. They cook beautifully. I used to cook a dozen chooks at a time and have never had a better roast chook (or roast beef). They're absolutely terrible when it comes to cleaning. That's why most commercial kitchens now use combitherms (Electric oven/Steamer) You simply spray with KOH and hose them out.

I'd personally be looking at the new "Pyrolytic" ovens if I was in the market for a new one.

IME, sometimes the spatter from cooking can narrow the flame opening without anyone realising and the flame can go out. Or there's a dodgy connection somewhere, or someone closed the door too hard.

Like most here I too like the gas cook top and electric fan forced oven.

Both are electric here at the moment but have the gas bbq for the power outages that happen annually

I was specifically talking about commercial ovens - you can't hose gas ones out.

In a domestic unit, they're all bloody terrible to clean.
