But, he uses rocks under the blocks .. on a concrete surface .. to move them. If you tried that on plain ground .. the rock would just sink and embed into the ground.

Maybe they carted in slate slabs that could be moved by hand. Used those and walked it that way.

What kinda horse would be able to pull that kinda weight though, or better yet .. what kinda wheel/axle (they had wooden ones back then) could support that type of weight?

No no, not like that.

Think of a slate stone say... 4' x 4' x 1". It would weigh a couple of hundred pounds and be totally movable. Use six of them side by side like a road. When you get the pillar to the end of the road, move the 2 exposed slabs from back to front, and move forward again. Repeat as necessary.
