Yep, I know exactly what you are talking about. Yesterday was my VLCD1, and I barely made 347 cals, and had to throw in an orange to get closer to 500. This afternoon I had a huge serving of spinach and 3.5 oz of ground beef, and it looked so silly, but I did manage to get to 236, and I still have dinner, but I am having fish and asparagus, so I will be coming in at just over 400 cals. I don't want to go too low on cals, and throw my body into starvation mode.
