I would LOVE to see some pictures of 500 calorie meals to put things into perspective. I am a visual person. I am sure others would find this helpful too.
This is what the Original Dr. Simeon Diet (that works) looks like: BREAKFAST: Tea or Coffee in any quantity without sugar. One Tablespoon of milk allowed in 24 hours. Stevia may be used. LUNCH: 1: 100 grams of veal, beef, chicken breast, fresh white fish, lobster, crab, or shrimp. All visible fat must be carefully removed before cooking, and the meat must be weighed raw. It must be boiled or grilled without additional fat. Salmon, eel, tuna, herring, dried or pickled fish are not allowed. The chicken breast must be removed from the bird prior to cooking. 2. One type of vegetable only to be chosen from the following: spinach, chard, chicory, beet-greens, green salad, tomatoes, celery, fennel, onions, red radishes, cucumbers, asparagus, cabbage (you can eat these until you are full). 3. One breadstick (Grissini) or one Melba Toast. 4. An apple, orange, or a handful of strawberries, or one-half grapefruit. DINNER: The same four choices as lunch (above).

I find the Grissini breadsticks at Safeway back in the bakery area, and they even have sea salted ones that taste very much like a pretzel!

You are free to move any of the items listed around throughout the day, but do NOT add anything that is not listed, and do not eat both breasticks or both fruits at the same time! It's also very important that you be taking potassium (99mg) when you are drinking so much water (at least 2 liters - plus the Yerba Mate tea), Twin Labs makes a good one. This should keep you from getting muscle cramps. Also, if you are using filtered water...get some mineral drops and add it to your water! I use the Concen Trace brand that has low sodium. You can get this at a healthfood store and buy the small bottle, you only need about 5-7 drops per liter.

A fun note: liquid Stevia comes in CHOCOLATE!! and it tastes wonderful in coffee...it does come in other flavors as well.

So, I start my day with a hand-ful of strawberries (borrowed lunch - so I don't eat fruit at lunch time) and a cup of coffee w/chocolate stevia and the milk (tastes like a mocha).
