Your hormonal issues are making it very difficult for you to lose weight. Low carb is the best plan for someone with your conditions. Mayonaise isn't bad... used in moderation it can be a part of your plan.

How many carbs are you eating?

Are the majority of your carbs coming from fresh vegetables?

Are those carbs spread out over the course of the day?

Are you exercising?

Are you drinking 64 oz of plain water every single day?

Are you eating protein with every meal and snack?

Read everything you can find about insulin, insulin resistance, metabolic disorder, syndrome X, blood glucose... learn all you can about how you became a diabetic. It will convince you that YOU must control your carb intake in order to control your disease.
