Because when you weigh yourself in the morning, your body has no food or water in it, since you've been fasting while you're sleeping.

Especially when you drink a lot of water through the day that you're not used to drinking, your body will store it. You're carrying water and food weight.

Try again in the morning, and you'll see that it won't be that weight

PS - as far as drinking water goes - you should drink as much as you can, but there's no proven "amount" you should drink. Even the 8 glasses a day theory has been disproven
