Its fine to use. I make curries all the time (Thai, Maylasian, Indian) and use the paste in the tub you can buy in the supermarket. As long as they are sugar-free, using ingredients like onions, lemongrass, garlic, galangal, chilis etc you are OK.
I also use "coconut cream" or the full-fat coconut milk. Never use coconut powder and make sure the ingredients are coconut and water only.
There are some carbs in the curry but its incredibly flavourful and satisfying, not to mention spicy, if thats your thing! 8)
