It is pretty unbelievable that you were able to consume so much food and still maintain your weight. I wouldn't advise anyone else to try it that way.

For one thing, you should limit your cheese to 3 or 4 ounces per day. I'm not sure how you were able to limit your carbs to 35 per day and eat that much cheese and eggs along with your vegetables. Both eggs and cheese have carbs-- not many, but they add up in the quanitities you describe.

Are you extraordinarily muscular? Muscle burns up a lot more calories than fat, so that could explain it.
