Kyp, several times now you have described, on the board, the portions you eat. And they don't even go close to "normal", regadless of what your definition of normal is.

Now, I've been looking for ways to ask this question in a more delicate manner, but I can't find one, so I'll just be straightforward, sorry: are you sure you are not bulimiac? You may want to look into this, because no amount of exercise is going to help you - especially as you grow older - unless you learn to control your portions.
As someone who's been bulimic, I don't think what he's explaining is.
As someone who's no longer bulimic, I will say this :

When not dieting, just eating and exercising minimally (1-2 hours every 2-3 days if even) [that's minimal to me, because I've been known to go 1-3 every day] I can easily put away 3000 calories and not gain a tenth of a pound (I am a 5'5, 21 y.o female). My calorie deficit is 1648; scientifically, I burn roughly 630 calories at work (and I work a lot); and when I do TurboJam or TaeBo, I burn between 700-1000 calories an hour.

So I think that it is very possible for him to have a high calorie deficit and be able to put away high amounts of food (and cheese) and not gain anything, and all his numbers being really well.
