Sorry you haven't gotten a response on this.

I don't use maple extract, it could be labeled as natural maple flavoring (not imitation), and should be located near the spices and vanilla extract in your grocery store. If your grocery store doesn't carry it, have you tried specialty or gourmet cooking stores? You might be able to order it online also. It's doesn't spoil and should ship just fine.

In the US, one packet of splenda is slightly more than 1/4 teaspoon. When I make flaxseed muffins, I use flaxseed meal or flaxseed flour. It's ground up flaxseeds.
