Well I haven't played too many different courses, but the one course I thought was a tough one is Pembroke Lakes. The fairways are pretty narrow, and most of the holes have water on one side of the fairway, which I mentioned was already narrow. Pretty tough greens too, alot of undulations and breaks. I wouldn't mind playing there again though, it was a beautiful course, just a bit pricey.
