So even if they're deep fried, we have to flip em over. I still don't understand why but the chef says so.
I haven't tried to cook karaage, but when deep frying sometimes you need to turn things over once or twice, specially if they float, as the underside tends to cook quicker than the top side, I always do I when I make empanadillas and stuff like that.

This is making me hungry again....
