If he says this unsolicited, then I automatically assume he's lying. If he says something like, "No, they're okay for some folks but I just prefer Korean women myself," only when asked without getting sharp about it, he sounds more credible.
What you say is true, specially the bolded part; must be a defense mechanism to prevent feeling bad over being rejected or unwanted, something like "If I dont feel attracted to white women, then their view of me means little" (even if the person is completely infatuated with them).

The people that make a big deal about it and make sure everybody knows their opinion on the subject is reason alone to think they dont really mean what they are saying: it's like a self-fulfilling prophecy of failure.
