Tex-Mex recommendations Amarillo/Palo Duro area?

Friend of mine will be doing the Route 66 thing this fall and while passing through our panhandle will be spending some time in Amarillo, Palo Duro, and taking in the Americana along '66. Looking for a few recommendations of really good Tex-Mex, taquieras, taco stands, and what-not in the area. She can probably eat for a week on the Big Texan steak challenge, but what else is around there that will have her saying "OMG!!.... the food in Texas is soooooo good!"?
