It's a hard boiled egg split in 2. after you split it you gently pinch the egg white to squeeze out the egg yolk into a bowl. You then can add various ingredients to suit your taste like mayo,chives,pepper and give it a good mix.You then fill a piping/iceing bag with your mix and fill the hollows out on the egg whites. To finish them off you can give them a dusting with paprika or something simalar. Loads of different recipes for them.

I found this recipe online for a sweet n sour devilled egg.

This recipe is not exact due to variations in size of eggs and egg yolks.
Eggs: 6
Apple cider vinegar
Mayonaise
Mustard (prepared mustard / yellow mustard)
Splenda
Dry mustard (optional)
Paprika
Hard boil the eggs. Cool and shell, cut in half lengthwise, and remove yolks to a separate bowl.
Mash yolks fine until there are no solid pieces. Moisten well with the apple cider vinegar (should have large, loose clumps when mixed) - about 3 Tsp.
Mix in 1tbsp mayo, and 2tsp of mustard. Add a pinch of dry mustard (optional), and three tsp of splenda, or to taste.
Mix should form soft peaks, be a little sweet, but also a bit too tart at this point. Overfill the egg white halves, cover and refrigerate for at least two hours. The whites will absorb the excess vinegar and a little flavor.
Sprinkle with paprika, and serve.
(For a thicker mix, the salad dressing could be reduced.)

i just spoon the filling - i don't pipe it, if that helps make things easier/faster...
