So I came across this pretty great recipe and I am actually wondering if it is okay. I have been on Atkins for about 5-6 weeks now but still usually have less than 20 carbs per day, and yes I am eating my vegetables. I found that if you mix 2 oz. of "8th Continent Soymilk" (.5 carbs), plus 2 eggwhites (about .5 or .6 carbs), and about 8 or 9 drops of sucralose to sweeten (zero carbs). If you blend it all together until it foams up and freeze it, it will taste just like ice cream. Especially if you add almond or vanilla extract (or even half a strawberry). Is this bad? I know we should be weary of dairy but considering this is Soymilk with only 2 carbs per 8 oz. I thought it may be okay. After all this only has about 1 carb in a whole bowl full and only about 50 calories with less than 1 gram of fat. Opinions please.

This sounds good... except I'd use heavy cream instead of soymilk. Soy is a legume... a bean... which makes it suitable for Atkins only in Pre-Maintenance or Mainenance and it's been linked to prostate cancer (something men should be aware of). If you use heavy cream your recipe would be totally Atkins friendly and, I imagine, even MORE like ice cream.

Since you're obviously counting calories and fat grams... what's your daily percentage for fat intake? Most Atkins-ers doing Induction average 7% carb, around 60-65% fat and the rest protein. You can NOT (repeat: NOT) do Atkins and low fat. It won't work.
In the beginning, fat doesn't matter. Later on, as you up your carbs it will matter and you'll have to reduce the fat percentage to compensate. But if you're eating less than 20 g a day (less than recommended, btw) then where are your calories coming from??? What's your protein %?? |
