Thank you for publishing your stock recipe. I am loading today and tomorrow. So I am putting it all together. You sound like an excellent cook. I am not creative like that. Thanks for sharing and keep them coming. Maybe you should start a thread with your recipes, yes?

I just put on the chicken stock but don't have a pressure cooker. Just using a soup pot and long cooking time. I will take out the chicken when it is done and let it simmer a while longer with the veggies in it so the flavors can develop. Then in a day or two, on to the onion soup. I can't wait to try it out.

linkan, I just ate the celery from the stock and you are right, it was soooooooooooo good. Can't wait until tonight to eat another portion.

linkan, I am getting ready to to make the onion soup. I had already made the stock so I am starting up the onions. FOUR pounds, really? I just did a bag of 2 # and it fills the pot 3/4 of the way. Just checking.

OMGosh it really is amazing. I see why you needed 4 lbs. I ended up only making 1/2 recipe after the onions cooked down. This is WONDERFUL. Thank you linkan.

You are welcome....Aren't those onions AMAZING? I have trouble not sitting down with a fork and eating the whole 4 lbs...

Problem is I wonder how many calories they are after you melt them. I tried to research but couldnt really get a good answer.
If you have left over stock Boil large stalks of asparagus in it and puree in food processor or blender add any spice you like. (garlic powder, curry) and wa la! asparagus soup! I used white asparagus. It was great......

I do have some stock left over. I need to freeze it or something so as not to waste it. I could drink it!!! Keep those recipes coming. And yes, the onions were AMAZING. You are right,it is pretty thick. I did dilute with more water. That was it takes me longer to eat. I love that stuff!!!! You want to be my new bbf? I will do the asparagus tomorrow and let you know.

OK...Figures it would be my buddy....

Here we go....
First you need 4 lbs of yellow onions cut them in slices "Long ways " not across the grain.
I sprayed the dutch oven with pam. then wiped it out. I know this is not allowed but a spray and a wipe? How much could you really get?
put the onions in the dutch oven with a teaspoon of salt.
cover and put in a 400 degree oven for an hour.
after the hour stir and put back but leave the lid a tiny crack open.
Cook for another hour and a half.
when you open the pot it will be brown. this is correct.
put it on the stove to a medium to high heat and cook until a very dark crust forms on the bottom. Watch so it is dark but not burnt.
BTW the onions themselves at this point are unbelievable. hard not to eat.
The darker the better.
Now "deglaze" with 1/2 cup water. (for those non cooks it just means pour the water in and scrape up the brown bits.)
Let the brown form again. the more times you do it....the better the soup will be. I did it twice. the third time instead of water I used cider vinegar. That replaced the Sherry I usually use.
After that is browned add 3 cups water and two of chicken broth.
I am following the diet religiously. I made my own chicken stock. ( if anyone wants that recipe let me know)
If you are ok with boxed ---using 2 cups beef broth and 2 cups of chicken and one water would be even better flavor.

add 1 tsp salt a few grinds of pepper 1 bay leaf and a few sprigs of thyme. ( dried is ok.
simmer 1/2 hour.

AMAZING! real food

I made this french onion soup last night.
I didn't use any broth - as it causes me to stall.
So, I simply used water and apple cider vinegar.
I didn't add so much liquid that it became a 'soup' because the onions tasted so darn good!

So, we had grilled chicken on top of our onions last night and it was super tasty.
Thanks so much for sharing the recipe.
Even hubby was surprised and he said, "THIS is diet food?? It's delicious!"
