I am SOOOOO trying this today....I just baked a lemon pound cake for my brother for Christmas and I fought the urge to lick the bowl and utensils but I can withstand having some of his if I have a little treat for myself to look forward to....

OMG I just tried this recipe and I have to say It is SOOOO SOOO good, I actually feel like I cheated. I am not a huge ice cream fan, so I just made the entire recipe as cake. I used my sweetleaf chocolate drops and then my Kal Powdered stevia extract (no aftertaste). There was absolutely NO aftertaste AT ALL.. I actually am so impressed with this recipe that I am shocked! This was such a much needed "reward" for myself as I have been around my family watching them eat cake and tacos and fries for the last few days and I have not cheated at all! Not even a lick! DAY 12 YAY YAY! :bigsmile: I only wish I could eat this every day. :cry: So I guess until next Saturday.....

K i dont even LIKE strawberries and this sounds AMAZING.... totally going to try it. im on phase 3 and having a protein day but i am so making this tomorrow its not even funny.. any other suggestions besides using strawberries? you people are genius' i swear!

well if your in P3 then I think you could use any type of fruit. Just be careful for the really sweet ones

OH MY GOODNESS. I am soooo excited to see this. I cannot wait to try it. My birthday is a little over a week from now, and I was already feeling sorry for myself that we cannot go out to eat, or have ice cream (which is my favorite). Thank you for this recipe!!!!!!!

There is an Australian dessert called Pavlova, which is a baked meringue. Same sort of thing YOUR idea is super clever. Where there's a will, there's a way!

Made this and still haven't tried the ice cream. I put the cake in a pan that was a little too big, it was really hard to clean the pan even though it's supposed to be non-stick. I tossed the cake. I will have another go at it soon though!

Made this last night. Here's my version. I gave half to my husband so I didn't feel so bad about eating extra protein. I also made sure that my calories were well below 500 for the day and that I had room for the extra calories. Enjoy!

P2 Chocolate Strawberry Cake and Ice Cream

4 egg whites
1 egg yolk
cream of tartar
1 tbsp cocoa powder
1 tsp vanilla extract
4 tsp xylitol (or other heat stable sweetener)
20 drops flavored liquid stevia (I used hazelnut)
100 grams of strawberries, hulled and cubed

Preheat oven to 350 degrees. Lightly spray a 3 cup casserole dish with cooking spray. Beat 4 egg whites and cream of tartar in a bowl until stiff peaks form. Add cocoa powder and xylitol, beat until stiff again. Add vanilla and stevia, beat again. Mix in strawberries by hand.

Pour half of the mixture into the casserole dish and freeze the other half. Bake "cake" for 15 minutes, then turn off oven and leave in for an additional 15 minutes. Freeze "ice cream" until desired consistency is reached, stirring periodically to freeze evenly. 1 hour gives you a soft texture.

Play around with the combinations: try chocolate with hazelnut ice cream, chocolate and coffee ice cream or, if your comfortable rogue, blueberries would be delicious.

This sounds incredible! I was lamenting Valentine's Day next week and told my husband I wanted lobster (without butter!) since it is the only fancy thing allowed on P2, but now I am going to totally make this!!!!! Thank you for creating this!
