Default Phase 2 Cake and Ice Cream
Ok so I watch way too many commercials and spend way to much time on the internet researching. Commercials make me want ice cream and the internet helped me figure out how to make it.

Dr. S said we could substitute 3 eggwhites with 1 egg for a protien for meat aversion.

I took the four eggwhites and beat them with a pinch of salt in my mixer (like a merangue) till the eggwhites made peaks.
Then i added 4 packets of truvia (i also tried it with straight powdered stevia but i have a shake bottle so i just shook some in) beat till stiff again
20 drops of chocolate stevia drops (I like a lot of stevia some like less, the aftertaste doesnt bother me) and the egg yolk, beat till stiff again (i used my mixer)
Then i cut up 100 grams of strawberries and mixed it by hand into the mix.

I halved the mixture.
one half went in a dish in the freezer
the other half i baked in the oven at 350 for 20 minutes then i turned the oven off and let it set in there for another 30 minutes.

took the cake out and cool it
take ice cream out of freezer and enjoy!

this makes one protien and one fruit

Wow, that sounds soooo good! I really fancy it myself but Truvia doesn't exist here. I do have some liquid Stevia but as everyone knows, it has a horrible after-taste. Any suggestions as to how I could do it with Stevia but without having the taste? Can we use food flavorings such as vanilla or almond? Or maybe a drop of peppermint oil (it's very strong, so only 1 drop would be needed) .

You can use striaght powdered stevia.
Or lemon oil! a drop of that!! that might get rid of the taste.
I ordered mine online from iherb.com and then from vitacost.com I use the stevita brand. shipping is like 2.00 and the liquid stevia flavors are like 3 .oo at vitacost. You can order truiva, stevita, nu stevia all kinds of stuff!!

Okay Jennifer. . . My two kids (who are taking hhcg with me) made your cake and ice cream recipe tonight for dinner!
My son and I weren't too crazy with the bitter stevia taste in the ice cream, my daughter loved it!

However . . . the cake was awesome!!!! it's like a strawberry crepe! Yum Yum Seems like the baking takes some of the bitterness out and it is soooooo good warm, right out of the oven. I can totally see us using this recipe again and again as we work through our rounds.

I couldn't wait for the dish of ice cream to completely freeze but the bits that were frozen were very similar to ice cream. The oven-baked part of the pudding stuck to the dish, so next time I will put it onto a non-stick baking sheet instead. I didn't have any strawberries so I used a few drops of vanilla essence and I used Stevia drops to sweeten it. The vanilla flavoring completely took away any Stevia flavor so that wasn't a problem.

I also made some normal lemon curd with the 3 yolks that were over (this is for my husband as it has butter and sugar in it) and that gave me the idea of doing something a little different with the pudding, which I will try next time that I do it. Take the juice from our daily lemon and add it to the egg yolk. Add Stevia to sweeten and cook slowly until the egg thickens the lemon juice into a lemon sauce. Then make the meringue as you would make a normal meringue but with Stevia instead of sugar and then separate into the 2 portions for freezing and for cooking and pour the cooled lemon sauce onto each one and stroke it through gently with a fork. Cook/freeze as before.

If you don't like the sharpness of lemon, then make an orange sauce instead.

Soooo for those of you that have tried this...I was thinking of using a muffin tin to bake in however I am just curious if any of you can tell me how much it will rise (if at all since there is no flour). I just don't want to overfill the muffin cup and have a burnt mess. ACK!

I guess the salmonella is no worse than the body builders that eat a raw egg in their protien shakes, and I think i read somewhere that completley freezing it takes care of "that" problem...it is just waiting for it to freeze

Um the mix rises quite a bit, i filled my pan half way and it went over the top but didnt spill.

If you just take your strawberries and freeze them some and mix them up in a blender they will be more like a smoothie I use to add ice cubes and do that and eat with a spoon so I didnot feel deprived. I will try your cake when I go back on P2 again in Sept.

You can make a stevia / erythritol blend to reduce the bitterness of too much stevia, but you'll have to mix the erythritol in a small bit of water and dissolve 1st, and it can sometimes come back out in cooking.

I can't WAIT to make this ice cream and cake!!!! I too have had THE WORST cravings for cakes, cupcakes & desserts. Go figure.
