Default Homemade jerky? Can it be done to protocol?
Someone was mentioning that while out and about, she got real hungry and got some beef jerky.
Is it possible to weigh out one portion of, say, a lean cut of beef, throw it into the dehydrator and have some beef jerky while on the go (as an emergency "meal" while out and about)?

I don't see why it would hurt anything. Just be sure that your portion sizes and calorie counts (i am not real exact when I count) are what they should be...... sounds legal to me!

I did it to survive my travel schedule

2 lbs bottom round roast - very lean!!!
Have them cut big slices so you can cut down to portion. I used kitchen twine to combine pieces to portion when necessary.
Preheat oven to 160º F (no higher than 200º F)

Marinade
5 Tbs. Bragg Aminos
1 1/2 tsp. onion powder
1 1/2 tsp. salt
1/2 tsp. fresh ground pepper (I used more)
(lots of recipes online, just eliminate or adjust to stay on protocol)

Place entire mixture with meat into a sealed plastic container and refrigerate for 12 to 24 hours.
Remove meat from marinade and pat it dry with paper towels.*
Place a piece of aluminum foil OR a baking sheet on the lowest rack, to catch any drippings.
Place meat slices on oven racks so they are not touching each other or hang from rack via toothpicks.
Dry in an oven for about 5-7 hours, until meat takes on a brown color and a hard, dry appearance and texture - wooden spoon in door to hold ajar.
I package in single or double servings via food saver and freeze.

It's a hit for hubby and teen daughter and especially to help me avoid airport trouble.

Thank you so much! I can do some dehydrating and carry this in my purse! Any fast food place sells "salads" so getting veggies on the go is easy, but I wouldn't want to trust MickeyD's with my protein portion at all!

I've also done this with the mock teriyaki recipe plus added grounds peppercorns. I will add more braggs next time so it has more flavor, but still good and not as salty.

TaraMocki Teriyaki Marinade

Ingredients - Adjust all ingredients to taste.
1/4 cup Braggs aminos
1.5 cup water
1/2 teaspoon ground ginger

1/4 teaspoon garlic powder
English Toffee Stevia (about 20 drops - or to taste)

Mix all ingredients. Marinate your meat!
