Trying low carb again
 
Hi all after being a moderately successful low carber in the past I am back trying it again. As a busy person with a early start to work can anyone recommend a quick pick up breakfast thats easy to digest? Tuna takes some eating for breakfast. Welcome back. Just started a couple months ago. Going well.

I pretty much changed my morning routine and get a little earlier to cook a breakfast. You may want to boil some eggs ahead of time. Maybe that would help for a moring or two.

Yep tried that, boil eggs in batches night before, peel, fridge, eat in morning.
i'm up at 6am and can't face cooking a breakfast then. I'm ok on an evening, but it's the breakfast that makes me want to pack it in. Wish I could find something quick 'n' easy, filling, and satisfying.Oh well back to the boiled eggs and tuna. http://www.lowcarbsite.com/images/smilies/icon_lol.gif

I love ham, roast beef or pastrami roll-ups. You could do these up the night before.

Just thinly sliced deli meat with whipped creamed cheese spread on it and then roll them up. They are finger food! I like olives, so on occasion I will put some olives in them as well. It doesn't take too much creamed cheese to make 6 or so.

Atkins Shakes: The Atkins website says their shakes are INDUCTION APPROVED. (Some folks disagree.) I think they're good if really cold with a dash of cinnamon and vanilla. Don't see why you couldn't put it in a travel cup.

Roll ups with cheese are great. (Thanks for the reminder Merlot)I don't know why I rarely have them. Every time I do, I go wow this is good! You can do them ahead of time and slip them in one morning to. Good luck.

The Atkins shakes (and bars) are for snacks, not meal replacements. If you have a shake for b'fast, supplement it with something like cheddar cheese and a cucumber.

Someone on here has suggested making crustless quiche and baking it in muffin pans - then freezing them. A few minutes in the microwave and you've got breakfast.

Once it cools off - I'll have flax meal based hot cereal 2 or 3 days a week. I mix up 1-2lbs of it (dry) and keep it in the fridge. About 3/4 a cup of the mix plus a cup or a bit more of really hot water and you've got a nice quick NO EGG breakfast. (Great for when you've just had enough eggs!)
