Default One Week Vegetable Challenge (OWVC) 5/4 - 5/10
Yes, folks... it's another one week challenge!!! Same rules as before, only this time the challenge is to eat a minimum of 12 net grams from veggies each day. You can eat up to 15 if you're in Induction, or up to 20 if you're in OWL.

The goal is AT LEAST 12 net grams from vegetables.

This challenge begins on Monday morning and runs through Sunday evening.

well, it's monday here - and i'll make it! (i'm on 17-20 nc from veggies at the mo)

i've had:

homemade salsa: 1.5 nc
cauliflower: 5nc (yes, i had a lot...mmmmm)
celery 1nc
avocado 2 nc (i count it as a veg

cucumber 3 nc

and i'll be having broccoli soup (5nc) with dinner and green beans - 2.5 nc worth

total 19.5

Trill, you come up with good challenges. I wasn't so hot on the water, (which taught me something) but I'm going to focus on this veggy one.

Sometimes it really helps to focus attention on a particular requirement for a week or so... work on one thing, get that in line and then work on another. I can already feel that I want more water today, even tho I don't "have to" since that challenge is over. I'm thinking about the water AND the veggies today.

This is going to be harder than I thought...

5:10 and I've had

8 cups romaine - 1.6ng
1/2 c red pepper - 3.3 ng

total... 4.9 ng.... "only" 7.1 left. I might have to eat some peas. LOL

Ok... didn't get dinner until just now. We had a real estate agent here to talk to us. So dinner was microwave reheated chicken and cucumbers/red pepper strips dipped in ranch dressing.

1/2 lg cucumber - 1.0
1/2 c red pepper - 2.3

Total for day: 4.9 + 2.3 = 7.2 ng

Goal NOT met.... 0.7

Durn I thought I had it! One serving of pumpkin (5 net carbs) and a cup of Green Beans making it 13. Unfortunately, I fogot the fiber in Green beans which made the net carb count 11.

Drinking the water was often a matter of will. This involves math!!!

Well, I'll make pumpkin floop again for B'fast and that will get me off to a good start.

What info do you guys use to determine carb count?? I bought a bag of salad today... the package says 4 servings per bag, 4 g carb per serving and 1 g fiber per serving. If I went by the package, that would be 12ng per bag. I ate half of it with my lunch. Lettuce, according to the Atkins site and other sites, doesn't have that many carbs... just curious what the rest of you do...

oops - forgot to leave my veggie-stats last night....

i did have 17.5 grams of veggies - hmmm, don't remember the exact counts (journal's downstairs - but i do remember the number!!)

there was pumpkin, salsa, broccoli soup, tomato, and garlic

not bad...

i went to the USDA site

http://www.nal.usda.gov/fnic/foodcomp/search/

and printed out a list of counts for 100 grams of my favourite veggies (all the ones i eat, actually)

i also printed out the fibre counts for my own info

then i weigh everything, - if i have 120 grams of cucumber, i calculate 3.13 x 1.20 (assuming 100 grams of cucumber is 3.13 - i'm not actually sure, my list is downstairs ).

i've got a tiny little digital scale and calculator in my kitchen ready for this stuff. it's not as annoying as it sounds, and i've heard from a girl who worked for the usda for 20+ years that they are really really dedicated to getting their counts right.

i never take the package info...but for pumpkin i've taken dr atkins counts because the usda site is unclear on pumpkin....

6 net carbs from pumpkin for me, about 5 combined of chopped onion and green pepper.

I should have had green beans for dinner!

yesterday, (may 6) i had 18.8 veggie carbs...

there was my spag sauce (tomato, onion and garlic - 7 grams per cup; i had a cup , cucumber, tomato, ...and my list is downstairs!

How much of these veggie are you eating, Tracy? I see broccoli at 4.5... a cup of cooked broccoli is 2.3. 2 cups??

for the broccoli - the usda said 100 grams of frozen is 1.7 nc, and 100 grams of raw is 4 nc...so i take the higher whether it's frozen or not to be safe....

but last night i had raw....(then roasted..as in, not from a bag first )


i do looove roasted broccoli

I might have hit my veggie goal yesterday. We ate at Olive Garden on the way home. I ate two bowls of salad... and then had double roasted veggies with my steak.

Hitting this 12ng from veggies is harder than I thought it would be...

well i decided to do 20 grams yesterday (12-15 veg) but only made it to 11 veg, as i was sooo nauseous last night i had to force in some pumpkin
