Frozen Kong stuffed with yogurt and kibble mixed (adjust her feed so she won't gain weight) or peanut butter? I swear the Kong has saved my sanity with Renee on crate rest. Keeps em busy for a long time. Id keep her crated or in a kennel so she cant chew your stuff when you aren't there, but a nice frozen Kong makes crate time much more enjoyable for a dog.

You could also look into those toys that you put treats in and the dog has to figure out how to get them out. I've seen a lot of different ones online and in stores. The come in wood, plastic, rubber and each has a different thing the dog has to do to get to the treat so if you rotate them she won't get bored.
One of the most maddening things about Amy is that she won't eat anything when I'm not here. I mean, except my furniture. I can leave her a stuffed kong, a marrow bone, a bully stick, probably a big old steak. And she'll leave them untouched until the second I walk through the door. Then she'll eat them. So treat puzzle toys are no good.

Garghhh

See that makes me think some of it is anxiety related. While she may not have full on "OMG YOU'RE LEAVING!" SA, for her not to want to eat anything while you're gone, but she'll eat it just fine if your there makes me wonder.

With my luck, if I ever did something like that, I'd be ASKING for an emergency foreign body removal surgery.....

With some of these guys you just cannot give them anything they can potentially destroy or rip or injest.

Mental stimulation. There's physical exercise and mental exercise. If you can't physically exercise her as much, exercise her brain. Sounds like a bored dog to me. Work that brain!
This ^^

hmm I like that. I might look into it. My condo is 960 square feet. My other option is leaving her in my spare bedroom and removing all stuffed things.

Or returning her and getting a hamster.
I tried this, came home and one of my dogs was out that was locked in a spare bed room. I thought my wife maybe came home during the day and let him out…sure as shit a the whole bottom half of the door was gone lol

Update: She's doing fine padlocked in her crate during the day. I've also been getting up a little earlier and walking her 3 miles before work so she's getting more exercise. And I've been teaching her some new tricks to keep that evil little mind occupied.
Yea!! Glad you found something that works.

My rat terrier won't even touch his food without me being in the room with him so I can relate!
