"the best way to boil eggs is in a pot of water that has been turned off after bringing it to the boil"

Not a good method if you want complete control of the cooking and the timing of the cooking. The best method of soft boiling eggs is simple and accurate and the eggs never crack.

1. put enough water in the pan and bring to the boil. Remove pan from the heat.
2. lower the eggs into the hot water with a spoon. There is no need to tap or pierce the eggs, they won't crack even straight out of the fridge.
3. put the pan back on the heat and bring back to the boil.
4. as soon as boiling starts, start the timer and boil for three minutes. no more, no less.
5. remove eggs from pan, put in egg cups and serve with toast soldiers.
