Now if I could find a nice skirt steak (flank?) and with some avocado...

Polla sells the real imported stuff, not cheap but when you grill or pan fry in butter..............
You don't even need a knife.........it's perfect.......
I have the guy trim ALL the fat off which is about 25% of the total weight........
BEFORE he weighs it.........
