My all time favourite is The Koln Concert by keith jarrett..

Might not be what most people understand under "instrumental" as it's a piano solo improvisation(!!).
Also, it is not something for the 'un-trained ear' and requires you to listen to it multiple times before even recognizing the awesomeness.

Finally, you need to concentrate while listening to it so behind your PC is not gonna work.
If you lose concentration it will make you nervous and it will sound random and chaotic.

Edit: I wish to add Nightwish - Last of the Wilds Tried to find a good live recording, but most of them were terrible recordings with tons of distortion.
