you guys know that meat isn't burnt, right? I would say the meat itself id probably med-med well. The burnt that you see is a glaze, that believe it or not tastes best when it is charred. Thus, it is called blackened...and is also done to fish. Might be a bit of a creole style cooking, not sure.
