Default Issues with Cauliflower Pizza Crust
I tried the recipe for the first time today, so soggy! how can I get some of the water content out of the cauliflower before I mix it in with the cheese and egg? I'm sure that's the issue, but don;t know how to dry out the riced cauliflower.

Any suggestions?

I usually use cabbage, raw and run through the food processor. I think even the cauliflower does best raw and not cooked like the original recipe calls for, though I've done it both ways. When I cook it, I put it on a paper towel and let it dry out some.

i cooked it in the microwave uncovered in order to evaporate as much water as possible then balled it up and 'squeezed' what i could out of it.

maybe line a baking sheet with paper towels and roll it around a bit to soak up the liquid

i used fresh not frozen, boiled on the stove for 20 minutes to soften, drained, and put in food processor.
way too soft to roll around....? not sure what to do. may try raw. thanks for any advice

How about straining it through cheesecloth or a towel to get rid of some of the extra moisture?

I have also read to bake it rather than boil to keep the moisture levels down. I have not yet tried it but some said it really helped. Let us know if anyone tries baking it!!

I steamed the cauliflower head (whole), let cool in colinder, riced it all, froze in 1 cup portions. When planning pizza for dinner, thaw portion in colinder, squeeze any remaining moisture by pressing against side of colinder. Also, did the 1 c. cheese, but only used 1/2 to 2/3 in cauliflower mix, saved the rest for the topping. Also, spread out cauliflower mixture in hot 10 inch frying pan, reduced heat, and cooked until firm enough to flip over to brown other side. Pizza under broiler long enough to melt cheese/ heat toppings. This method worked for me.

I hope it works for you---use some type of grease in fry pan----smaller & thinner crusts were easier to deal with then bigger & thicker---tried same method to make taco shells---kinda fell apart though---tasted good!

So I made the crust last night - it was really good. The pan needs more spray then I thought it would so it stuck a bit but it survived.

My only complaints are that there isnt a big taste difference between the crust and the toppings and i wanted to try and get the crust crunchy which I didnt really achieve - ideas anyone?

No reason to "save" the cheese for the top. You can use all the cheese you want! I load the top with lots of toppings and cheese. I use cabbage run through the food processor instead of cauliflower which makes for a more substantial crust but it's still not crunchy. I think you can only get that with some kind of flour. Someone mentioned using coconut or almond flour with the crust to make it crunchier. I like the recipe the way it comes out though so I've never bothered to try it. So you might do a search for that recipe and try it.

I have a tofu press, and I use it for any and all vegetables to make patties or such things as crusts. It squeezes out all liquids. I made my mock crab cakes out of zuchinni, and (not on phase 2), and they were perfect, not moist at all. I use it for falfel mix as well. I will use it for cauliflower pizza crust, it will gradually squeeze the water out. I think it's tofu xpress.com.

I didnt have any problem with water cuz i used raw cauliflower. I just wanted it crunchier

but I never heard of a tofu press - I just use paper towels - its pretty cool

what are your mock crab cakes Rhonlynn?

They are made with zuchinni, and I think they might have crackers in them. I'm vegetarian, to a point (I like seafood, too), and mock crab cakes are way far from Dr. Simeon. They have Panka bread crumbs in them.

Grammy - i found the recipe that adds flour - its says add 1/4 - 1/2 cup of coconut flour to the recipe and its more like a real pizza crust - has anyone tried it?

I guess you could make a sort of bread crumb by toasting the almond or coconut flour - maybe?
